3. Recipe
Yield: Approx. 5–6 medium pizzas or multiple bakery items
Ingredients
.All-Purpose Flour – 1 kg (8 cups)
.Sugar – 100 g (1/2 cup)
.Salt – 15 g (2 1/2 tsp)
.Milk Powder – 20 g (2 tbsp)
.Butter – 150 g (2/3 cup)
.Baking Powder – 5 g (1 tsp)
.Instant Yeast – 15 g (1 1/2 tbsp)
.Water – 400 g (1 3/4 cups)
4. Method
1. In a large mixing bowl, combine flour, salt, milk powder, baking powder, and yeast. Mix well.
2. If working in winter, activate yeast in slightly warm water before adding. In summer, yeast can be mixed directly with dry ingredients.
3. In a separate bowl, dissolve sugar completely in normal cool water (not too cold). Stir until fully combined.
4. Gradually pour the sugar-water mixture into the dry ingredients and mix.
5. Knead using a mixer on medium speed or by hand until dough starts coming together.
6. Once the dough begins to form, add softened butter and continue kneading.
7. Knead thoroughly for 10–15 minutes until the dough becomes smooth, elastic, and slightly stretchy. The more proper kneading, the better the dough texture.
8. Cover and let it rest for approximately 1 to 1.5 hours or until doubled in size.
9. Once risen, punch down to release air.
10. Shape as desired for pizza, pizza bread, cheese rolls, bread cutlets, chicken bread, spring rolls, or egg rolls.
