Traditional Beef BBQ
In the Signature Style of Chef Shah Meer
1. Definition
Beef BBQ is a classic marinated and flame-grilled beef preparation made with tender boneless cubes, yogurt-based marinade, and aromatic spices, cooked over charcoal or grill for a smoky finish.
It is defined by:
Tender, juicy beef cubes
Deeply infused marinade
Smoky charcoal aroma
Light char marks on the surface
Balanced tangy and spicy flavor
In the philosophy of Chef Shah Meer, perfect Beef BBQ must be properly marinated, cooked over controlled heat, slightly charred outside, and soft and juicy inside — never dry or rubbery.

2. History
Barbecue-style meat cooking has roots in Central Asian and Middle Eastern traditions, which later influenced Mughlai cuisine in the subcontinent. Over time, BBQ became an essential part of Pakistani food culture.
From street-side grills to family gatherings and Eid celebrations, Beef BBQ remains a favorite dish. The use of yogurt, spices, and slow grilling over charcoal reflects the region’s rich culinary heritage and love for smoky flavors.

3. Recipe
Yield: 6–8 servings
Ingredients
Beef (boneless cubes) – 1 kg
Yogurt – 1 cup
Onion Paste – 2 tbsp
Ginger Garlic Paste – 2 tbsp
Red Chili Powder – 1 tbsp
Salt – to taste
Garam Masala Powder – 1 tsp
Turmeric Powder – ½ tsp
Lemon Juice – 2 tbsp
Vinegar – 2 tbsp
Oil – 2 tbsp
Skewers – as required
4. Method
5. In a large mixing bowl, add beef cubes. Add yogurt, onion paste, ginger garlic paste, red chili powder, salt, garam masala, turmeric powder, lemon juice, vinegar, and oil. Mix thoroughly until all pieces are well coated.
6. Cover and refrigerate for at least 2 hours, preferably overnight for best tenderness and flavor absorption.
7. Thread the marinated beef cubes onto skewers evenly.
8. Preheat charcoal grill or BBQ grill. Cook the skewers on medium heat, turning occasionally to ensure even cooking and light charring on all sides.
9. Grill until beef becomes tender and fully cooked. Avoid overcooking to prevent dryness.
