3. Pizza Dough

Ingredients

.All-Purpose Flour – 1 kg (8 cups)
.Sugar – 30 g (2 tbsp)
.Semolina – 200 g (1¼ cups)
.Salt – 18 g (3 tsp)
.Milk Powder – 40 g (⅓ cup)
.Eggs – 2 large
.Baking Powder – 5 g (1 tsp)
.Instant Yeast – 15 g (1½ tbsp)
.Olive Oil – 30 g (2 tbsp)
.Water – 350–400 g (1½ to 1¾ cups)

Method – Dough Preparation

1. In a large bowl, combine flour, semolina, sugar, salt, milk powder, baking powder, and instant yeast.

2. Add eggs and olive oil.

3. Gradually add water and knead until a soft, slightly tacky dough forms.

4. Knead for 8–10 minutes until smooth and elastic.

5. Cover and let it rise for 1–1½ hours or until doubled in size.

6. Divide into equal portions according to pan size. Rest for 15–20 minutes before rolling.

4. Chicken Fajita Filling

Ingredients

.Chicken – 300 g (small cubes/strips)
.Soy Sauce – 1 tbsp (15 g)
.Lemon Juice – 1 tbsp (15 g)
.Vinegar – 1 tbsp (15 g)
.Red Chili Powder – 1 tsp (5 g)
.Cumin Powder – 1 tsp (5 g)
.Garlic Paste – 1 tbsp (15 g)
.Oil – 1 tbsp (15 g)
.Onion – 1 medium (sliced)
.Capsicum – 1 medium (sliced)

Method – Chicken Fajita

1. Heat oil in a pan. Add garlic paste and sauté lightly.

2. Add chicken and cook until lightly golden.

3. Add soy sauce, lemon juice, vinegar, red chili powder, and cumin powder. Mix well.

4. Cook until chicken is fully done and moisture dries.

5. Add sliced onion and capsicum. Cook for 2–3 minutes on high flame.
