Fajita Sauce

In the Signature Style of Chef Shah Meer

1. Definition

Fajita Sauce is a creamy, tangy, and mildly spicy sauce used in fajita-style pizzas, wraps, and sandwiches.

It is defined by:

Smooth yogurt-mayo base

Balanced tanginess from lemon and vinegar

Light smoky heat from red chili

Subtle garlic depth

Creamy yet pourable consistency

In the philosophy of Chef Shah Meer, a perfect Fajita Sauce must complement the chicken without overpowering it, providing moisture, spice balance, and a professional finish.

2. History

Fajita Sauce developed alongside Tex-Mex cuisine in the United States, particularly Texas.

As fajitas gained popularity in the mid-20th century, creamy and spicy sauces were introduced to enhance grilled meats and wraps. Over time, South Asian chefs adapted the sauce by incorporating yogurt, chili spices, and cumin — creating a richer and more flavorful variation now commonly used in pizzas and fast-food menus across Pakistan and the Middle East.

Recipe

Yield: Approx. 1½ cups (350–380 g sauce)

3. Ingredients

.Yogurt – 1 cup (240 g)
.Mayonnaise – 2 tbsp (30 g)
.Tomato Ketchup – 1 tbsp (15 g)
.Soy Sauce – 1 tbsp (15 g)
.Lemon Juice – 1 tbsp (15 g)
.Vinegar – 1 tbsp (15 g)
.Red Chili Powder – 1 tsp (5 g)
.Cumin Powder – 1 tsp (5 g)
.Crushed Red Chili – 1 tsp (5 g)
.Black Pepper Powder – ½ tsp (2–3 g)
.Garlic Paste – ½ tsp (5 g)
.Salt – to taste (approx. ½ tsp / 3 g)

4. Method

1. In a large mixing bowl, add yogurt and mayonnaise. Whisk until smooth and creamy.

2. Add tomato ketchup, soy sauce, lemon juice, and vinegar. Mix well until fully combined.

3. Add red chili powder, cumin powder, crushed red chili, black pepper powder, and garlic paste.

4. Mix thoroughly until smooth and evenly blended.

5. Add salt according to taste and adjust seasoning if required.

6. Cover and refrigerate for at least 30 minutes before use for better flavor development.

Consistency Adjustment

If sauce is too thick → add 1–2 tbsp chilled milk or water.

If too thin → add 1 tbsp mayonnaise and whisk.

Chef Shah Meer’s Professional Tips

Always use thick, fresh yogurt (hung curd preferred for richer texture).

Resting the sauce improves flavor depth.

For extra smoky taste, add a pinch of paprika (optional).

Do not overuse garlic; balance is key.

Storage Guidelines

Refrigeration:
Store in airtight container for up to 4–5 days.

Do Not Freeze:
Freezing may split the yogurt-mayo base.

Hygiene Tip:
Always use a clean spoon to avoid contamination and extend shelf life.

Fajita Sauce is creamy, tangy, and perfectly spiced — an essential companion for bakery-style fajita pizzas and wraps.
