Frozen Kebabs are pre-shaped and pre-seasoned minced meat patties prepared in advance and stored in the freezer for convenient cooking. These kebabs are made with aromatic spices, fresh herbs, and binding ingredients to maintain texture after freezing.

2. History

Kebabs have been a staple of South Asian, Middle Eastern, and Central Asian cuisines for centuries. With modern freezing techniques, households began preparing kebabs in bulk for convenience.

Frozen kebabs are now a common kitchen essential in Pakistani homes, especially for Ramadan, gatherings, lunchboxes, and quick family meals.

3. Recipe

Yield: Approximately 20–25 medium kebabs

Ingredients

Minced Meat (Beef / Mutton / Chicken) – 1 kg
Onion (grated and squeezed dry) – 1 medium
Green Chilies (finely chopped) – 4 to 5
Fresh Coriander (finely chopped) – ½ cup
Ginger Garlic Paste – 2 tbsp
Coriander Powder – 1 tsp
Cumin Powder – 1 tsp
Garam Masala Powder – 1 tsp
Red Chili Powder – 1 tsp
Salt – to taste
Egg – 1
Bread Crumbs – ½ cup (or as required)

5. Prepare the Mixture
In a large mixing bowl, combine minced meat, grated onion, green chilies, fresh coriander, ginger garlic paste, coriander powder, cumin powder, garam masala powder, red chili powder, salt, egg, and bread crumbs.

6. Mix Thoroughly
Mix well until all ingredients are fully combined and the mixture becomes uniform. If the mixture feels too soft, add a little more bread crumbs for proper binding.

7. Shape the Kebabs
Take small portions and shape into round balls. Gently flatten them into kebab patties using your hands.

8. Freeze Properly
Arrange the kebabs on a tray lined with plastic wrap or parchment paper, ensuring they do not touch each other. Cover and freeze for 2–3 hours or until completely firm.

9. Pack for Storage
Once fully frozen, transfer them into airtight freezer bags or containers. Store properly sealed.

10. Cooking Instructions
When ready to use, remove directly from the freezer and fry or grill without defrosting. Cook on medium heat until golden brown and fully cooked from inside.

Chef’s Important Note

Do not thaw frozen kebabs before frying. Frying them directly from frozen helps maintain shape and prevents breaking.

Storage Guidelines

Freezer Storage:
Store in airtight freezer bags for up to 2 months.

Refrigeration (Raw Mixture):
If not freezing, store raw mixture in refrigerator for up to 24 hours only.
