All-Purpose Flour – 2 cups (240g)
Granulated Sugar – 1 cup (200g)
Baking Powder – 1 tsp
Baking Soda – ½ tsp
Salt – ½ tsp
Unsalted Butter (softened) – ½ cup (115g)
Eggs – 2 large
Fresh Orange Juice – ½ cup (113g)
Sour Cream – ½ cup (120g)
Vanilla Extract – 1 tsp
Orange Zest – from 1 orange
Ground Almonds – 50g

Topping

Sliced Almonds – 50g
Optional: Icing Sugar for dusting

Method

1. In a bowl, combine flour, baking powder, baking soda, salt, and ground almonds. Mix well and set aside.

2. In a separate bowl, beat butter and sugar until light and creamy.

3. Add eggs one at a time, beating well after each addition.

4. Mix in orange juice, sour cream, vanilla extract, and orange zest until fully combined.

5. Add the dry ingredients into the wet mixture and gently fold using a spatula (cut and fold method). Do not overmix.

6. Pour the batter into the prepared 9-inch pan. Sprinkle sliced almonds evenly over the top.

7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
