Garlic Butter Buns
In the Signature Style of Chef Shah Meer
1. Definition
Garlic Butter Buns are soft, fluffy yeast-based bread rolls infused with rich garlic butter and fresh coriander. These buns are baked until golden and brushed with aromatic garlic butter for a flavorful finish.
They are defined by:
Soft and airy texture
Buttery richness
Strong yet balanced garlic flavor
Golden baked crust
Fresh herb aroma
In the philosophy of Chef Shah Meer, perfect Garlic Butter Buns must be light and fluffy inside, golden outside, and generously layered with garlic butter without becoming greasy.

2. History
Garlic butter bread variations originated in European baking traditions, particularly in France and Italy. Over time, these buttery breads evolved into rolls and buns served alongside soups, pasta, and grilled dishes.
In South Asia, garlic butter buns became popular in bakeries and cafés, often served as tea-time snacks or as a side with BBQ and continental meals.

3. Recipe
Yield: 10–12 Buns
Ingredients
.All-Purpose Flour – 500 g
.Salt – 10 g (1 tsp)
.Sugar – 50 g (¼ cup)
.Instant Yeast – 10 g (1 tsp)
.Milk – 250 ml (1 cup, lukewarm)
.Egg – 1
.Butter – 100 g (divided)
.Garlic (crushed) – 20 g (4–5 cloves)
.Fresh Coriander (chopped) – 10 g
4. Method
5. In lukewarm milk, mix yeast and sugar. Let it rest for 10 minutes until slightly foamy.
6. In a large bowl, combine flour and salt. Add the yeast mixture, egg, and 50 g softened butter. Mix and knead into a soft dough. Add a little extra milk if needed. Knead for 8–10 minutes until smooth and elastic.
7. Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
8. Prepare garlic butter by melting the remaining 50 g butter and mixing it with crushed garlic and chopped coriander.
9. Roll the risen dough into a rectangle. Spread garlic butter mixture evenly over the surface. Roll tightly into a log and cut into equal portions. Shape each portion into a round bun.
10. Place buns in a greased baking tray. Cover and let them rest for 20–30 minutes for second rise.
11. Preheat oven to 180°C. Bake for 20–25 minutes or until golden brown.
12. Brush freshly baked buns with leftover garlic butter for extra flavor and shine.

Chef Shah Meer’s Tips
Do not overheat milk; it should be lukewarm, not hot.
For extra softness, brush buns with butter immediately after baking.
You can sprinkle sesame seeds on top before baking for added texture.
