Manchurian Pizza is a modern Indo-Chinese and Italian fusion creation.

The term “Manchurian” became popular in South Asia after the rise of Indo-Chinese cuisine in the 1970s, where Chinese cooking techniques were adapted to local spices and flavors. Over time, chefs began incorporating these bold green masala profiles into pizza, creating a unique hybrid that gained popularity in commercial bakeries and fast-food chains across Pakistan, India, and the Middle East.

3. Pizza Dough

Ingredients

.All-Purpose Flour – 1 kg (8 cups)
.Sugar – 30 g (2 tbsp)
.Semolina – 200 g (1¼ cups)
.Salt – 18 g (3 tsp)
.Milk Powder – 40 g (⅓ cup)
.Eggs – 2 large
.Baking Powder – 5 g (1 tsp)
.Instant Yeast – 15 g (1½ tbsp)
.Olive Oil – 30 g (2 tbsp)
.Water – 350–400 g (1½ to 1¾ cups)

Method – Dough Preparation

1. Mix flour, semolina, sugar, salt, milk powder, baking powder, and yeast in a large bowl.

2. Add eggs and olive oil.

3. Gradually add water and knead until soft dough forms.

4. Knead 8–10 minutes until smooth and elastic.

5. Cover and let rise for 1–1½ hours or until doubled.

6. Divide according to pan size and rest 15–20 minutes before shaping.

4. Green Manchurian Chicken

Ingredients

.Boneless Chicken – 500 g (cubed)
.Yogurt – ½ cup (120 g)
.Fresh Coriander – 1 cup (30 g, chopped)
.Fresh Mint – ½ cup (15 g, chopped)
.Green Chilies – 4–5 (as per taste)
.Garlic Cloves – 5–6
.Ginger – 1 inch piece
.Lemon Juice – 2 tbsp (30 g)
.Cumin – 1 tsp (5 g)
.Salt – to taste
.Black Pepper Powder – ½ tsp (2–3 g)
.Turmeric – ¼ tsp (1 g)
.Oil – 3–4 tbsp (45–60 g)
.Cream (Optional) – 2 tbsp (30 g)

Step 1 – Prepare Green Masala

Blend coriander, mint, green chilies, garlic, ginger, cumin, lemon juice, and a little water into a smooth paste.

Step 2 – Marinate Chicken

1. In a bowl, combine chicken, prepared green masala, yogurt, salt, black pepper, and turmeric.

2. Mix well and marinate for 30 minutes.

Step 3 – Cook Chicken

1. Heat oil in a pan.

2. Add marinated chicken and cook on medium heat until fully tender.

3. If needed, add a little water for softness.

4. Once cooked, add cream (optional) and cook 2–3 more minutes.

5. Cool completely before assembling pizza.

8-inch pizza → 65 g chicken
12-inch pizza → 80 g chicken
14-inch pizza → 95 g chicken
16-inch pizza → 115 g chicken
18-inch pizza → 140 g chicken

6. Toppings

.Green Chili Sauce – ½ cup (120 g) for 12-inch
.Mozzarella Cheese – 100–120 g (1 cup shredded) per 12-inch
.Cheddar Cheese – 80–100 g (1 cup shredded) per 12-inch
.Capsicum – thin slices
.Black Olives – as required

(Adjust cheese proportion according to pizza size.)

7. Assembling

1. Roll dough according to desired pan size.

2. Place in greased pizza pan.

3. Spread green chili sauce evenly (do not use red pizza sauce).

4. Add a layer of mozzarella and cheddar cheese.

5. Distribute measured green chicken evenly.

6. Add thin capsicum slices with slight spacing.

7. Place black olive pieces on top.

8. Baking

1. Preheat oven to 180°C.

2. Bake for 20–25 minutes until:
